For the fig gin punch, first gently wash the figs and cut into bite-sized pieces. Sprinkle with the sugar.

In a large enough bowl, mix the figs, white wine and gin and leave to infuse for several hours.

Before serving, pour the fig gin punch with mineral water and sparkling wine.
