For the elderberry semolina pudding, bring the elderberry nectar to a boil over medium heat. Add the sugar and gradually sprinkle in the semolina, stirring constantly. Reduce the heat and let the pudding stand for 6-8 minutes until it thickens. Stir in between every now and then.
Pour into a large bowl or food processor and blend thoroughly for about 10 minutes, until the pudding is fluffy and foamy and has at least doubled in volume.
Then transfer the elder semolina pudding into small bowls.
