preheat to 200 °C.
2) Separate eggs into yolks and clear. Mix curd cheese with yolks, grated cornflour, lemon zest, sour cream and 1 small pinch of salt until smooth. Beat egg whites with sugar until creamy and mix gently.
3) Fill ramekins about three-quarters full with curd mixture, place in an ovenproof dish (preferably a metal dish with a thin bottom) and add enough boiling water to cover half of them.
4) Cook the casseroles in the oven (lowest rack) for about 20 minutes.
5) Whip the cream. Turn the casseroles out onto plates and serve garnished with strawberry ragout, cream and pistachios.
Strawberry ragout (4 servings, preparation approx. 20 min) Clean, rinse and drain strawberries. Crush half of the strawberries with the sugar and add the juice of one lemon.
Cut remaining strawberries into pieces and stir into the sauce.
