For the parsnip and potato soup, peel and dice the parsnip and potatoes, and finely chop the onion. Heat butter or canola oil in a pan and sauté the onions.
Add the vegetable cubes and fry briefly. Now stir in the curry powder, add soup or water and cook over low heat until soft. Puree the parsnip-parsnip soup with a hand blender.
