Old English Christmas punch, which is served on the evening of December 24 by candlelight and carols.

Boil the water with the spices, pour it through a dishpan while it is still hot. Add the wine and heat gently, stirring throughout. Do not make ! Sweeten as desired.

Beat the egg yolks until creamy and pour into the punch bowl together with the stiffly beaten snow. Gradually fold in the heated wine and whisk until creamy.

In the meantime, steam the cut apples at 220 °C for about 30 minutes. Cut the baked apples into wedges and bring to the table together with the punch in bowls.
