For the creamy potato soup, prepare vegetable soup and bring to a boil. Peel and dice the potatoes and add to the soup. Sprinkle in caraway seeds.
Continue to simmer until potatoes are tender. Whisk together yogurt, creme fraiche and flour and add to soup. Continue to simmer for 10 minutes, then finely puree and season with salt, pepper and nutmeg.
Pluck the parsley and serve the creamy potato soup garnished with it.
