For the zucchini noodles with smoked brook trout, wash the zucchini and slice into fine strips, finely dice the onion and garlic and fry lightly in olive oil.
Cut the brook trout, add and pour whipping cream. Bring to the boil briefly and season with salt, pepper and horseradish. Add the zucchini strips and mix with the sauce. Serve the zucchini noodles with smoked brook trout.
