For the potato soup with crispy bacon, heat a frying pan, fry the bacon cubes and slices until crispy and drain on a paper towel.

Heat the canola oil in a saucepan, peel the onion and chop finely. Peel the potato and cut it into very small pieces. Sauté the chopped onion in the canola oil until translucent, add the potato cubes and stir well.

Pour in the warm vegetable soup and let it boil. Make a mash in the bacon slices with a chive stalk. After about 10 minutes, puree the soup with a blender and add salt.

Add coconut milk and blend well. Place on the stove and bring to the boil again. Season with salt, pepper and nutmeg to taste.

Blend again with a blender and whisk until frothy. Pour into a warmed soup bowl and garnish with bacon cubes and bacon slices and serve the potato soup with crispy bacon.
