Scrape the pumpkin and fry together with the chopped onion, put in a sieve to drain, let cool and season. Cream curd and yolk, add pumpkin, chopped pumpkin seeds and sour cream. First add only 1/3 beaten egg whites, then fold in the flour and the remaining beaten egg whites. Put this mixture on a buttered strudel dough sheet, roll it up and bake in the oven at 180 °C for about 20 – 25 minutes, depending on the thickness.
