Instructions:

Sauté the scraped pumpkin with onion and pass through a sieve. Allow to cool. Cream curd cheese and egg yolk and add sour cream. Add the pumpkin and season with salt, pepper, parsley, cumin and paprika and chopped garlic. First add only 1/3 beaten egg whites – then add the flour and the rest of the beaten egg whites. Put this mixture on a buttered strudel dough sheet, roll it up and bake in the oven at 180 °C.
