For the pumpkin strudel the dough, mix the flour with egg, water and the other ingredients and form into a dough. Leave to rest for 20 minutesFor the filling, peel the pumpkin, cut into cubes, salt and leave to stand for 3/4 hour. Sauté onion until translucent, add squashed pumpkin flesh. Cut red and green peppers into small cubes and mix in as well. Let the pumpkin-pepper stuffing steam a bit and then cool. Mix in finely chopped herbs, cream, paprika powder and season if necessary. Pull out the dough on a floured strudel cloth, spread the filling, roll up, cut off hand-width pieces. (The strudel can also be baked whole.) Place the strudel pieces in a buttered baking dish, brush with egg and bake at 200°C until golden brown.
