For the pumpkin seed oil pancakes with vanilla ice cream first prepare the pancakes. Mix the first 5 ingredients and the pumpkin seed oil to a dough, let rest briefly.
Bake the pancakes in a pan with some fat (butter).
For the brittle, put sugar and water in a pan and aukochen until the water has evaporated and the sugar caramelizes (turns brown).
Add pumpkin seeds until the seeds are well enclosed in the mixture.
When the mixture has reached a nice brown color, remove the pan from the heat and turn out onto, for example, a baking sheet (be careful, very hot!). Let cool slightly, then crush with a rolling pin.
On the finished pancakes give a scoop of vanilla ice cream and sprinkle with some pumpkin seed brittle. Decorate the pumpkin seed oil pancakes with whipped cream.
