For the apple compote with ginger, peel and core the apples and cut into pieces. Peel the ginger and grate finely.
Wash the lemon hot, dry it and peel the peel in a spiral shape and squeeze out the juice. Bring sugar, ginger and 5 tablespoons water to a boil in a saucepan and simmer over medium heat until the mixture caramelizes slightly.
Add apples, lemon juice and zest, and a little water if desired, and simmer everything over low heat until tender, stirring occasionally.
Season the stewed apples with ginger to taste with sugar and/or lemon juice and allow to cool.
