For the spicy strudel with pumpkin, peel the onion and chop into very fine cubes. Cut the cabbage into fine pieces as well. Cut the pumpkin into fine strips or pieces and set aside.

Heat the oil in a high frying pan and fry the onions for a few minutes until they are a little translucent, then add the minced meat and fry well.

When the meat is well done, add the cabbage and fry everything together for a few minutes. Season with salt, cumin and garlic and season to taste.

Then remove the pan from the heat and let it cool down a bit. In the meantime, preheat the oven to 190 degrees and line the baking tray with baking paper.

When the meat is no longer hot, but lukewarm or even cold, roll out the puff pastry and put the filling on it. Now place the pumpkin pieces on top of the filling.

Carefully roll up and fold in the ends. Whisk the egg in a bowl and spread on the strudel. Bake in the oven for about 25 minutes.
