For the Spitzbuben, quickly knead a shortcrust pastry from flour, butter, sugar, vanilla sugar, baking powder, lemon zest and yolks. Leave to rest in a cool place for half an hour.

Cut out cookies with and without a hole and place on a baking tray lined with baking paper and bake in the preheated oven at a good heat for about 10 minutes.

Spread the cookies without hole with jam and cover with a cookie with hole, roll in the vanilla sugar mixture while still warm.
