Instructions:

To make the Moose Burger with Crispy Onions, Wild Fruit Relish and Vegetable Chips, first heat oil in a large, heavy skillet over medium-high heat for the crispy onions.

Add onions, reduce heat, season with salt, and saute until onions have taken on color and are somewhat crisp, about 20 minutes. Keep warm.

For the wild berry relish, in a small heavy saucepan, heat oil over medium-high heat. Add shallots and sauté 2 minutes, until soft and golden.

Stir in berries, sugar, lemon juice and chili flakes, then reduce heat and simmer until relish is thickened, about 10 minutes. Remove from heat and let cool.

Line a large plate with paper towels. To make the vegetable chips, heat oil in a large, heavy saucepan over medium-high heat. If the oil begins to sizzle as soon as you hold some vegetables in it, it is hot enough.

In several batches, gently fry the parsnip strips in the oil for about 1 minute, until golden. Turn them over occasionally as you do this. Transfer to the plate with the paper towel and immediately sprinkle with salt. Repeat this process with the remaining parsnips.

Fry the beets in the same way, each portion for about 3 to 4 minutes, until the edges of the slices begin to curl. Transfer to paper towels and immediately sprinkle with salt.
