For the spelt and wild garlic loaf, first cook the spelt rice in salted water until very soft and let cool. Finely chop the shallots and mix with the grated almonds and the wild garlic cut into strips, egg and Parmesan. Grind half of the cooked spelt rice in a food processor and mix with the remaining spelt rice and the other ingredients. Form loaves and bake in hot olive oil until golden brown.
For the wild garlic herb spinach, sort and wash wild garlic and arugula. Chop coarsely. Wash the herbs and chop them as well.
Now sauté everything in some olive oil, stir in fresh goat cheese and season with some lemon juice, pepper and salt.
Serve the spelt and wild garlic loaves on the wild garlic and herb spinach.
