Instructions:

Wash, peel and dice the carrots and potatoes. Bring to the boil with water, salt and the cut parsley stalks and cook covered over low heat for about 15 minutes. Puree lukewarm with chopped onion and remaining parsley. Mix in lemon juice, horseradish and oil, season with salt and pepper.
