For the wholemeal spelt fritters with wild garlic, first blanch the wild garlic. Whisk the egg and olive oil. Add the milk, salt, nutmeg and whole spelt flour.
Strain the wild garlic, squeeze and cut – add. Leave the mixture to stand in the refrigerator for at least 1 hour. Heat some oil in a pan and bake not too thin pancakes.
Makes about 4 pieces. Let cool, cut into strips and serve with soup.
