Prepare strawberries (ready to cook, e.g. hull, remove woody parts and dirt) and cut into slices. Add sugar (1), half of the orange liqueur and orange juice. Steep the berries for 15 min.

Meanwhile, beat egg yolks, remaining orange liqueur and powdered sugar for ten minutes until pale and thick.

Whip egg whites and salt until very creamy. Sift in the sugar (2) and continue beating until glossy white. Fold into the egg cream.

To bake, heat a tiny bit of butter in a non-stick skillet. Pour in some of the egg mixture at a time, spread evenly in a circle, and bake at a low temperature with the lid closed for about three min, until the omelet is warm through and through, do not turn to the other side. Slide onto a plate, top with a few marinated strawberries and fold the omelette over them. Sprinkle with powdered sugar (2) and bring to the table on the spot.
