Instructions:

Soak the matie fillets for 2 hours. Then place in buttermilk for half an hour. In the meantime, peel the banana and cut into pieces. Mash very finely with a fork. Fold in crème fraîche and mayo. Season heartily with salt, pepper and curry. Cut litedammer into small cubes and fold in. Drain the fillets. Arrange on lettuce leaves and top with sauce.

Serve with whole wheat bread.
