For the wild garlic buns from the steamer, first knead all ingredients for 20 minutes in a mixing bowl with a dough hook. If the dough is too dry, add 1-2 tablespoons of water if necessary. Then cover and let rise for 1 hour in the oven at 40 °C.
For the filling, bring all ingredients to a boil and simmer until they begin to thicken. Then let cool and cover.
Portion the dough into 16 balls, place on a baking sheet with baking paper, cover with a tea towel and let rise again for 10 minutes.
Then flatten the balls in your hand, place 1 tablespoon of filling in the center, fold ends together and place seam side down back on a steamer rack lined with parchment paper. Cook the wild garlic buns in the steamer at 100% steam for 10 minutes.
