For grilled redfish fillet in banana leaf, first fillet the redfish and place the fillets in a shallow dish. Heat the oil and briefly sauté the garlic, kitchen herbs and orange zest. Extinguish with the white wine as well as the vinegar and cook for about 2 minutes. Cool and spread evenly over the fish fillets while still lukewarm. Cover with cling film and marinate for at least 2 hours.
Cut the banana leaves into 20 cm long pieces and blanch in salted water for 30 seconds. Place the drained fish fillets on top. Season the fish with pepper and salt and now fold it into a parcel.
Grill the packets on both sides for about 2 minutes and let them warm on the broiler for another 4 minutes. Serve grilled redfish fillet in banana leaf.
