For the sweet and spicy cocktail tomato sauce, halve 1kg of the cocktail tomatoes and bring to the boil in a pot.

Chop the herbs. Remove the seeds from the chilies and add to the tomatoes and continue to simmer briefly.

Add salt and balsamic vinegar and puree. Stir in the remaining cocktail tomatoes (uncut) and the preserving sugar and simmer for 5 minutes.

Mix in the chopped spices and pour the sweet and spicy cocktail tomato sauce into sterile twist-off jars while still hot.
