For the sweet potato fries, first toast the sesame seeds without fat. Mortar with the salt.
Peel the sweet potatoes and cut into sticks.
Heat the oil (do a cooking spoon test). Fry the sweet potatoes in it for 2-3 minutes at a time. Transfer to paper towels and drain briefly.
Then deep-fry the sweet potatoes again at a higher temperature for another 2-3 minutes to make them nice and crispy. Again, place the sweet potato fries on paper towels to drain and immediately sprinkle with the sesame salt mixture.
