After washing, remove the skin from the quinces and potatoes and grate them with a rösti grater. Fold in the cream, season and place Rösti in a frying pan heated with clarified butter. Toast the rösti over medium heat until crispy on both sides, perhaps in small batches.
Brown cashews in oven over high top heat. Sauté the tofu and leeks in the clarified butter, season with herb salt, pepper and soy sauce. Finally, add the cashews and spread everything together evenly over the hash browns.
