For the Appenzeller sausage salad, first skin the sausage and cut into strips. Cut the cucumbers into slices and the cheese into small cubes. Mix all prepared ingredients loosely in a bowl.
Mix the vinegar, salt, mustard, pepper and oil to make a marinade, add it loosely to the salad and let it marinate.
In the meantime, clean the endive, rinse, drain very well and cut into strips. Peel, core and dice the tomatoes. Peel and dice the onion and eggs.
Season the Appenzeller sausage salad with spicy seasoning and sprinkle with diced tomatoes, onions, eggs and parsley.
