Mix flour and vanilla, put on a work surface and press a small hollow in the center. Cut the butter into small pieces and place in the hollow, add the honey, quickly knead everything into a smooth dough. Roll the shortbread dough in plastic wrap and let it rest in a cool place for at least 2 hours. Transfer the dough to a floured work surface and form rolls about 25 cm long. Using the handle of a wooden spoon, press a hollow into the center lengthwise. Knead marzipan with orange peel and grated chocolate and also form two rolls about 25 cm long. Place one marzipan roll in each of the dough cavities, roll up and form into a square. Cut slices about 1 cm thick. Cover baking tray with baking paper, place slices on it at even intervals and bake in preheated oven at 180 °C for about 15 minutes. Melt the chocolate coating in a hot water bath and decorate the cooled slices with chocolate sprinkles.
