For the zucchini muffins with paprika traffic light, preheat the oven to 180°C convection oven. Mix flour, baking powder, thyme, nutmeg and salt. Separate the egg and beat the egg white until stiff. Fold into the dough with the milk, egg yolk and oil.
Finely grate the zucchini and fold into the batter, divide batter into muffin tins. Bake for approx. 20-25 minutes.
Meanwhile, dice the onion and bell bell pepper (peel the bell bell pepper with a peeler if necessary) and sauté in olive oil. Stir in the milk and cream cheese and blend.
Season the zucchini muffins with paprika traffic light with salt and pepper and repeat this with all the colors.
