For the ham dumpling soup, cut rolls into small cubes, chop onion very finely and fry lightly in butter and let cool. Finely dice ham, finely chop parsley and chives. Mix bread cubes with ham, herbs, onions, salt, pepper and nutmeg. Add eggs and pour in a little milk to make a dumpling mixture. Bind with breadcrumbs if necessary.

Press the mixture firmly together and let rest for 20 minutes. Form small dumplings and simmer in salted water until soft. Put the dumplings into hot beef soup and add parsley and chives to the ham dumpling soup.
