For the pretzel sausage dumplings, put the pretzel bread in a bowl, pour the hot milk over it and let it sit for about 20 minutes.

Sauté the onion cubes in oil or butter until translucent and add to the bread, parsley, white sausage and egg, season to taste and mix well.

Form small dumplings with wet hands and put them into boiling salted water, cover the pot briefly and bring the water with the dumplings to the boil again.

Then let them cook for about 12 to 15 minutes, depending on their size.

If necessary, cook a test dumpling.

Cook the dumplings in the steamer or covered in the pot on a sieve insert over steam.

If necessary, turn the dumplings in flour before cooking.

The mixture can also be cooked as napkin dumplings.

To do this, form the bread mixture into a roll, place it on plastic wrap or a damp cotton cloth that has been oiled or dusted with flour, roll it up and twist the ends together tightly.

Place in boiling water and cook for about 20 to 30 minutes, depending on diameter and size.

If necessary, place a plate on top of the dumpling so that it is completely covered with water. Unwrap the finished dumpling, slice and serve.
