Bread Roll (Napkin Dumpling)

First, melt the butter and pour over the dumpling bread together with the milk and mix together. Leave to stand for about 30 minutes.

While the dumpling bread is soaking, peel the onion, chop it finely and sauté it briefly in a little oil. Add the onion, eggs, salt and a pinch of nutmeg to the dumpling mixture and stir well.

Spread a plastic wrap and form a roll of the dumpling mixture on the wrap. Roll it up in the cling film and close the ends well (like candy). Roll the closed roll back and forth on the kitchen board two more times so that the dough is well distributed.

Wrap the roll in a kitchen towel, seal at both ends and cook in lightly simmering water for about 35 minutes.

Remove the roll from the cling film, cut into slices and serve as a side dish.
