For the cherry pancake buns, preheat the oven to 200 °C. Line a baking tray with baking paper and place it empty in the oven.
Whisk eggs, brown sugar, milk, mineral water, salt, baking powder and nutmeg and let swell a bit.
Drain cherries and collect crushed juice. Take out baking tray and grease paper. Pour batter onto tray and spread cherries on top. Bake for 12 minutes.
Mix powdered sugar and cinnamon and sprinkle the finished cherry pancakes with the mixture.
Using the baking paper, roll up the dough and cut it into slices to make small snails.
Serve the cherry pancake buns with vanilla ice cream.
