Elderflower Vinegar

For the elderflower vinegar, fill a clean, tightly sealed, 1 liter jar 3/4 full with plucked elderflowers, carefully freed from insects.

Whisk the honey and vinegar together and pour over the top and let steep in a dark place for about 4 weeks.

Store elderflower vinegar in a jar or use immediately.
