Instructions:

For the curd pancake, first prepare the pancake dough. For the pancake dough, mix the milk, sugar, eggs and salt until smooth and add the flour, beat until smooth and add a little mineral water. Let the dough rest. Then fry the pancakes in a pan.

Once the pancakes are all ready, mix the curd cheese with the egg yolks, vanilla sugar, zest and juice of an orange. At the same time, whip the egg whites with 120 g of granulated sugar until stiff peaks form and gently stir into the curd mixture.

Cover the outside of a cake ring with baking paper and place the first pancake in it. Spread approx. 3 tablespoons of curd mixture on top. Place the next pancake on top and spread the curd mixture on top again.

Continue until both are used up. End with a pancake. Bake in the oven at 180 degrees for about 55 minutes.

Serve with whipped cream, vanilla sauce and chocolate sauce.
