Prepare the yeast dough according to the simple basic recipe and let it rise.
Preheat the oven to 190 °C. Cover a baking tray with baking paper.
Mix the cinnamon and sugar.
Roll out the dough into a rectangle and brush with the beaten egg. Sprinkle thickly with the cinnamon sugar. Form into a roll and cut off snails about 2 inches thick.
Place the cinnamon buns on the baking sheet with enough space between them.
For every 2 cinnamon buns, set aside 1 more. Form the bunny ears from the cinnamon buns set aside (1 cinnamon bun makes 4 ears) and press lightly onto the cinnamon buns. You can see exactly how this works in the video that accompanies this recipe.
Again, brush with egg. Place 2 almonds on each as teeth. Use the raisins to suggest snout and eyes.
Bake for about 20-25 minutes.
