For the zucchini carpaccio, shave the zucchini very finely and place on a large platter. Drizzle with high quality olive oil and carefully pour over a little balsamic cream.

Sprinkle with a little coarse sea salt. Thinly slice Grana Padano and spread over zucchini slices.

Sprinkle with olive herb.
