For the zucchini casserole with minced meat, preheat the oven to 200 °C top/bottom heat. Grease a casserole dish for 2 people. Chop the leek, onion and carrot.

Heat the oil in a pan and add the vegetables. Salt and pepper the mince, add it and brown it. Add paprika powder and tomato paste. Then season with oregano and basil. Let it cool down a bit.

Stir in a beaten egg and immediately pour into the baking dish. In the meantime, coarsely grate the zucchini and add salt. Let stand for about 10 minutes and then squeeze out the zucchini juice. Separate the egg.

Stir in the herb cream cheese and the yolk. Add salt, pepper and herbs. Beat the egg whites with a pinch of salt until stiff and fold in.

Spread on the mince and sprinkle with grated mozzarella. Bake the casserole for about 1/2 hour until the cheese gets color.
