Instructions:

Preheat the oven to 220 °C.

Rinse the melanzane, cut them in half and remove the seeds with a spoon. Cut the melanzane into larger pieces and mix them with garlic, olives, capers, half of the basil, vinegar, oil and honey. Season with salt and freshly ground pepper.

Form the mixture in a gratin dish, cover with aluminum foil and steam in the oven for one hour.

Then remove, cool and chop into small pieces. Sprinkle the remaining basil over the tartare, season to taste and sweeten with a little honey if you like.

Toast the slices of white bread and spread the tartar on them.
