Rinse gooseberries, drain well. Remove buds and stems. Cut berries into small pieces. Remove skin from onion and chop.

Chop the raisins. Put all ingredients in a saucepan and bring to a boil.

Bring to a hearty boil once. Simmer on low heat for 45 minutes with the lid closed. Stir occasionally. Rinse screw-top jars with hot water, pour in hot relish. Clean the rims of the jars well and close them tightly.

Serve with: grilled meats, cold roasts
