Grind all ingredients in a blitz chopper not too fine, season heartily and fill into the crab shell.

Steam the stuffed crab shell in a sieve over salted water for ten minutes, then dust with corn flour and deep-fry for three to four minutes.

Tip: It goes well with a cold sauce cooked with water, rice vinegar and brown sugar and seasoned with chopped chili.
