Peel the onion, garlic and carrots and cut into small cubes. Peel the ginger and grate finely or cut into small cubes.

Heat some olive oil in a soup pot and sauté the onions together with the garlic until translucent. Deglaze with vegetable soup and add the carrots. Season with salt, pepper and the finely grated ginger.

Simmer the carrot-ginger soup for about 10-15 minutes until the carrots are soft. Add the juice of the squeezed orange.

Then, using a blender, blend the soup to make a creamy vegetable soup with no carrot pieces visible.

Season the soup to taste with a little crème fraîche and serve immediately hot.
