For the baked pork medallions with herb crust, skin the lung roast, cut into thin slices, quickly fry in hot oil.

Grease baking dish and put salted and peppered meat. Preheat oven to 200 °C. Grate cheese.

Whisk eggs, creme fraiche, cheese and herbs, pour over pork medallions and bake for 20 minutes.
