For the Striezel in the muffin tin, mix flour, sugar and salt in a bowl. Crumble the yeast and mix it with some lukewarm milk in the middle of the bowl.

Mix the mixture with some flour and let it rise covered in a warm place for about 20 min. Add soft butter, eggs, remaining milk and rum and knead into a smooth dough.

Add a little more flour if needed and let the dough rise in a warm place for about 30 min until doubled in volume.

You can make two versions: 1 x the classic Striezel made of 3 strands and smaller portions in the greased muffin tin. These are very suitable for freezing.

Let rise in the respective mold again for about 20 min, brush with beaten egg or milk if desired and bake at 180°C muffins for about 25 min. and Striezel for about 30 min.

If you like, you can mix dried cranberries or rum raisins into the dough. The Striezel in the muffin tin tastes best with jam.
