Instructions:

First, prepare some lukewarm milk with yeast and a little flour to make a dampfl.

Mix 125 ml lukewarm butter, sugar, milk, yolk, egg, salt and lemon zest.

Once the dampfl has risen, add to the flour with the egg milk. Knead into a smooth dough. Add a little more milk as needed.

Cover the dough and let it rise for about 20 minutes.

Then cut into three equal parts. Shape these on a floured board into sticks that are a little thicker in the middle than at the ends. Braid them into a plait-like strudel. Press well together at the ends.

Place on a greased baking sheet, let rise. Brush with egg diluted with water, sprinkle with hail sugar and bake the Striezel at medium heat for 45 minutes.
