For the chicken knuckles a la Dolly, heat the oil in a pot. Season the chicken knuckles and fry until crispy.

Remove the knuckles and fry the bacon with the halved shallots, carrots, garlic and celery.

Flambé with brandy and deglaze with red wine. Then add the bunch of herbs and as soon as the stock boils, put the knuckles back into the pot.

Allow to cook in the oven for about 50 minutes. Serve the chicken knuckles a la Dolly.
