For the avocado baguette au gratin, first cut the avocado, remove the pit, scoop out the flesh and mash with a fork. Cut the dried tomatoes into small pieces, finely chop the parsley. Cut the camembert into slices. Cut the baguette lengthwise.
Mix avocado with the dried tomatoes, parsley, salt and cayenne pepper and spread on both halves of the baguette. Top with the sliced camembert. Bake in the oven at 180 degrees (convection) for 5 to 10 minutes. Serve the baked avocado baguette while still warm.
