For the green tomato jam, cut the tomatoes into thin slices. Leave to infuse with the sugar for 2 days. Reduce juice in a saucepan until half. Add tomatoes and juice of one lemon and simmer for about 45 minutes. Stir again and again.

Fill the hot green tomato jam into jars and seal tightly so that a vacuum is created.
