For the avocado tartare with ginger cream and shrimp, mix lemon juice, 2 tablespoons orange juice and avocado oil to a vinaigrette, season with salt and pepper.

Peel shrimp except for the tail segment, scoop out the intestines and drizzle with half of the vinaigrette.Halve, pit and peel avocados. Cut the flesh into 5 × 5 mm cubes and drizzle with the remaining sauce.Shrimp and avocado for 30 minutes.

Mix the ginger paste and crème fraîche, season with orange juice, salt, pepper and sugar.Whip the cream until stiff and fold into the cream.

For the avocado tartar with ginger cream and prawns, divide the avocado cubes between glasses, top with ginger cream and garnish each with two prawns and coriander.
