For the tomatoes with avocado-mushroom stuffing, preheat the oven to 180°. Cut a lid off each tomato and carefully remove the flesh and seeds with a spoon. Sprinkle the inside of the tomatoes with salt and place them upside down on kitchen paper to let the liquid drain out.

For the filling, clean and chop the mushrooms. Melt the butter in a pan and saute the mushrooms there for 5 minutes until soft. Cut the avocado in half and scoop out the flesh.

Mash it with a fork and mix in the breadcrumbs. Add the sauteed mushrooms to the avocado mixture and mix everything well. Season to taste with salt, pepper and lemon juice. Fill the tomatoes with the filling and bake the tomatoes with avocado-mushroom filling in the oven for 15 to 20 minutes on a baking sheet or in a baking dish.
